I have a serious sweet-tooth. I like to blame it on the fact that I craved everything sweet when I was pregnant with my daughter, and it just happened to stick around. I mean, I pretty much (think I) need to have some sort of dessert at night. Every night.
However, eating cake or cookies or ice cream or candy every night does not do well with trying to be fit and healthy. I wish it did, but unfortunately, these desserts are just not good for me and tend to only add weight to my post-pregnant body. Humph.
So what do I do when I’m trying to eat clean but want something sweet? My friend shared an amazing clean-eating recipe for a dessert! These Chocolate & Peanut Butter Oatmeal Bites not only satisfy my sweet-tooth, but they are also (for the most part) healthy!
- 1 cup dry oatmeal
- 1 cup toasted coconut
- 1/2 cup carob chips
- 1/2 cup peanut butter (all natural)
- 1/2 cup ground flaxseed
- 1/3 cup honey
- 1 tsp vanilla
DIRECTIONS: Stir all ingredients together in a medium bowl until combined. Let chill in the refrigerator for half an hour. Once chilled, roll into balls about an inch in diameter. Store in an airtight container and keep refrigerated for up to one week.
Makes 24 balls. Serving size = 2 oatmeal balls.
